We also collect eggs four times a day to ensure they are fresh . We use disposable gloves when handling eggs, to retain the protective bloom on the hatching eggs. Next we check and separate the fertile eggs and place them in egg cartons pointed end down. We do not clean our hatching eggs to ensure hatchability. Our Hatching eggs are dated with pencil, and kept them a cool room around 55 degrees.

Our edible eggs are cleaned, placed in cartons and refrigerated.
